Rich Vanilla Buttercream

I have had alot of clients and bakers pop into my Montville studio asking for my buttercream recipe.


I am very lucky to live and work in the middle of the best dairy country so I feel very blessed to have access to the finest dairy product.


The secret of the buttercream is to use only the best butter and milk and if you do I am sure you will be absolutely delighted with the buttercream you are going to whip up for your baking delights.  It is amazingly simple.


LIBBY'S VANILLA BUTTERCREAM RECIPE


500grams salted butter

1kg Icing sugar or icing mixture

Vanilla essence

Full cream milk or thickened cream (the thickened cream is an option and will give a very rich end product)


  • Place butter into bowl of electric mixer and beat on medium speed for around 5 minutes or until pale.  If the butter is still significanly yellow keep beating until pale.

  • Add icing sugar and beat on low speed slowly adding the milk or cream.  Be careful not to add too much milk or cream at once otherwise your buttercream will be too soft.  Add just enough to achieve a piping or soft spreadable consistency


SPECIAL NOTES:


Vanilla essence is great to use as it will give you a buttercream without the vanilla seeds but if you don't mind the gorgeous seeds in your buttercream then vanilla paste is excellent to use.


This buttercream can also be a base to flavour with fresh fruit puree or passionfruit but be careful how much to add as it can break down the buttercream and you will need to add more icing sugar to bring it back to a good consistency.

Flaxton Gardens looked amazing for last evenings wedding.

It was such a privilege to be invited by the brides family to attend and it was such a pleasure to celebrate Claire and Josh's wedding.

The cake of choice was 3 tiers of white chocolate, dark chocolate and caramel mudcake and it was wonderful to see the cake cut and then enjoyed by guests.

The 3 course meal was delicious and Flaxton Gardens lived up to it's reputation as a fine dining restaurant.
